Is located near Covington, Texas just 15 miles north of Hillsboro or 40 minutes south of Ft. Worth. We retired and moved to the farm in 1999 to concentrate on a life-long dream of mine to raise registered Angus cattle. My wife, Jane, became involved in the Covington Organic Gardening Friends club and has been our inspiration to have a chemical free cattle operation. Since we were raising the best beef breed in the world we decided to make it even better by using only organic fertilizers such as molasses, humate, and compost teas on our fields. We do not use pesticides and have not had to use any antibiotics on our cattle since we started our organic fertilizing program.
Our Coastal Bermuda, annual Ryegrass, Tall Fescue and clover pastures are green and provide our cattle with the balanced nutrients they need to grow as God intended. Our specialty animals are never subjected to any growth hormones. Each calf eats only milk and grass from the time they are born until they reach approximately 1200 lbs. At this weight there is an optimal balance between meat tenderness, size of the steaks and marbling. We maintain a healthy herd. If a calf gets ill we separate that animal out of the herd and treat it with the necessary medications. Once an animal has been medicated, it no longer qualifies to be sold as a "grass finished animal" and thus will not make its way to your table (unless you happen to get it at the super market)!
When an order is placed an animal will be delivered to the butcher where the beef will hang in a cooler for at least 21 days. This dry aging process is extremely important in obtaining the gourmet taste and tenderness of the meat. At the end of the aging process, the beef is divided into the desired cuts and packaged into quantities you specify. We then deliver your beef to your freezer!
